White Bean Soup

A beautiful fall soup

1 lb Great Northern White Beans and 2 Qts Water (put into pot and bring to boil, let sit for 1 hour)

1 Chopped Onion

1 Leek

3 Cloves Garlic

1 Potato Peeled and Chopped

1 Bay Leaf

1/2 teaspoon dried sage

Pepper to taste

1/2 teaspoon fresh parsley

Add the onion leek and garlic bring back to boil and then cook over medium heat for 1 hour

Add potato and seasoning and cook for an additional hour or until the beans are tender
