Sweet Pea Guacamole

1 16 oz. bag of frozen peas, defrosted

3 firms Roma tomatoes diced

1 bunch cilantro chopped

1 jalapeno pepper, seeded and finely dice end

1 shallot finely diced

2 cloves garlic, minced

Juice of one lime or more to taste

Pinch of cumin


In a food processor fitted with the “S” blade, process peas until smooth. Transfer to a larger bowl and stir in remaining ingredients by hand. Chill and serve.
