Not So Sloppy Joes
2 cups red onion, diced (one large)
2 cups red bell pepper, diced (one large)
2 cloves garlic, pressed
1 can dice salt-free tomatoes (14.5 oz)
1 can salt-free tomato paste (6 oz)
1 tsp chili powder
2 Tbsp sun-dried tomato powder
2-15 oz cans salt-free black beans, drained
1 lime, juiced
In a non-stick pan, water saute onions, peppers and garlic for 7-8 minutes until soft and translucent. Add diced tomatoes, tomato paste, sun-dried tomato powder and beans. Stir until well combined and cook for another 2-3 minutes until heated. Remove from heat and stir in lime juice.
Chef's note: Great served over a bed of steamed kale.
