Curried Chickpeas with Brown Rice

A wonderful and satisfying recipe for a main course. Serve with Brown Rice and a salad for a complete meal.
Total Cooking time: 20 Minutes
4 Servings
1/2 cup diced sauteed onion (sautee in veg. broth or water)
1/2 tsp tumeric
1/2 tsp cumin
1/2 tsp dried coriander
1/4 tsp. cayenne pepper
2 15 oz. cans chickpeas (drain and rinse well)
2 Tbsp chopped fresh cilantro
1 Tbsp lemon juice
Instructions
Saute the onions, cook until brown and crispy
Add the spices until aromatic and lightly toasted
Add the rinsed chickpeas
Add the cilantro and lemon juice stir
Add a small dash of salt to taste
Remove from heat
Put mixutre in covered bowl in refrigerater
Cool for at least 30 minutes before service
To Add Brown Rice
Cook Brown Rice according to instructions on packet and serve aside the curried chickpeas
