Gazpacho Soup

A cold vegetable soup made up of raw vegetables and a tomato base.
2 1/2 lbs vine ripened or canned tomatoes, chopped
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
1 small white or yellow onion, chopped
1 medium cucumber, peeled, seeded and chopped
2 large garlic cloves, minced and mashed to a paste with 3/4 teaspoon salt
3 tbsp red-wine vinegar or to taste
1 can unsalted tomato juice
Mix together ingredients, store in covered container in refrigerator overnite
Thin soup, if necessary, with water or additional tomato juice
Served garnished with additional cucumber or green bell pepper
