Polenta
An easy corn meal dish.

Cooking time: 8 - 10 min.
2 of 18 oz tubes of polenta, plain, quinoa, or basil garlic
1 of 25 oz jar of no-oil spaghetti sauce
Slice polenta and place slices in a 9x13 in casserole dish. Pour spaghetti sauce over the polenta and microwave on high for 8 minutes, or maybe 10 minutes if you add a lot of extra stuff (see below).
Alternatives
This basic dish is tasty, but a little bland. You can spice it up by adding garlic powder, onion powder, or other spices. Alternatively, you can turn it into a Mexican dish remeniscent of a tamale pie by using polenta, refried beans, canned green chilis, cumin, and salsa.
Food sources
Polenta is a corn meal that comes in a tranparent plastic tube with metal rings at the ends. It comes in plain and multiple flavors and can be found at Trader Joes, Whole Foods, and Henrys. It can be a little hard to find in the stores. In Whole Foods, it is in the section with pasta noodles on the very bottom shelf.
No-oil spaghetti sauce can be found at Trader Joes - its the one with mushrooms. Whole Foods has a no-oil spaghetti sauce that is labeled almost identically to the one with fat in it, except the no-oil version has a small "No Fat" on the top of the label.
