Garlickee Tacos

A delicious and quick Taco recipe
Serve 4 two tacos each
Ingredients:
2 cups cooked brown rice
2 Tbsp. crushed garlic
4 ears sweet corn shucked, cooked and cut off cobb
Corn Tortillas (no oil variety) 2 per person, this recipe serve 4
Juice of 5 limes
juice of 1 orange
pinch sea salt
pinch black pepper
1 generous tsp garlic powder
1 1/2 tsp ground cumin
1 small red and one green pepper (seeded and diced)
1/2 red onion finely minced
bunch cilantro, leaved chopped
carton cherry tomatoes
1 pkg baby peeled carrots
4 small zucchini cut into medallions
1 pkg. while sliced mushrooms
1 pkg. small yellow tomatoes for garnishing
1 pkg Tofu Meat Crumbles
