by Denise Bowles — last modified Feb. 25, 2014
A warm or cold option for dinner or lunch. Serves 8 as a side dish. This dish can also serve as a light alternative to the "regular" pasta dinner, although in that case, this amount will serve 4 to 6.
1 Can Artichoke Hearts in Water
2 Cups Whole Wheat Orzo Pasta
3 Tbsp. Capers
1 Chopped Red Pepper
2 Cups Fresh or Frozen Corn
2 Cups Fresh or Frozen Asparagus
1 Can White or Black Beans Drained
2 Tbsp. Bragg Liquid Aminos
Cook orzo pasta according to package instructions, drain and put back into the pot.
Add corn, asparagus and red pepper to the pasta. Stir.
Add drained beans, and Bragg liquid aminos. Stir.
Turn heat on stove to low and warm through all the vegetables. Serve.
